For our sparkling wine base, we use only the finest grapes from our vineyards. Our estate sparkling wine is produced using the traditional method of bottle fermentation. This means sugar and yeast are added to the base wine. The base wine then ferments and ages in the bottle for at least nine months before it is disgorged. This means the yeast is removed from the bottle again. Our estate sparkling wine matured on the fine lees for 36 months, giving it an especially fine mousse, an elegant interplay of aromas, and a touch of luxury.
